EXECUTIVE SOUS CHEF Our client a well-recognized international luxury resort in the UAE with multiple restaurants requires a passionate, experienced and energetic Exec Sous Chef with deluxe hotel experience (Asian job experience preferred). He/she must be hands on and support the Executive Chef in the day to day operations and oversee the signature restaurants and multi cuisine restaurants. The Executive Sous Chef will report to the Resort Executive Chef and lead a team of over 100 staff. The candidate must have the ability to lead and train staff and his/her major strengths should include good culinary capability and knowledge of international cuisines, monitoring and analyzing food cost efficiency. Solid HACCP and cost control knowledge is imperative. A good ability to provide consistency in the product is important. The ideal Chef candidate will show an ability to work with an international brigade, show good leadership, be patient and exhibit strong communication skills. He/she will strive to uphold a safe working environment by ensuring all staff work safely, seek opportunities to increase food revenue, decrease kitchen expenses and maximize departmental productivity without compromising guest's satisfaction. The Executive Sous Chef will promote professional work habits by encouraging staff to act with integrity and recognize this trait in others and reward them appropriately He/She will be responsible for maintaining labor cost and food cost, preparing a high standard of food quality and food presentation and recipe standards. He/she will be responsible for health and safety, sanitation and safe food work practices, organization and cleanliness. Finally lead colleagues according to the company's policies and performance management. Qualifications . Diploma or Equivalent in catering/Hotel Management Experience . Minimum 10 years of international experience in a five star hotel and restaurants . Experience running large multi-outlet venue Competencies . Ability to develop and create standardized recipe/menus . Ability to plan and implement food promotions . Ability to negotiate at a senior level Note: Asian experience is preferred Salary Compensation: Base US$6000 tax free per month (Negotiable based on experience); Housing allowance of US$2200 plus all expat benefits including full family package with school fees for two school aged children.
